  • Duties and Functions:
  • Overseeing all aspects of the Bistro and Banquet departments.
  • Inspect all areas of operation to ensure the highest quality of food, beverage and service.
  • Monitor all standards of sanitation and cleanliness as set by the Brand, as well as County, State and Federal Boards of Health by using health inspection guidelines, inspection reports and self inspections.
  • Complete all reports in a timely manner (ie, daily checklists, activity logs, shift reports, associate documentation, training)
  • Recruit, select and train staff, ensuring that all necessary certifications are in place (ie, TIPS, Food Safety Training, etc.)
  • Scheduling and evaluation of staffing guidelines to properly prepare for all upcoming events and hotel occupancy
  • Motivate, coach, and counsel all Food & Beverage department personnel according to Summit Management Standards.
  • Responsible for the ordering, maintaining of inventory and controlling costs
  • Maintain professional, neat and clean attire, including name tag for self and all Food & Beverage associates.
  • Have knowledge and understanding of all department policies and procedures, and communicate and enforce all policies fairly and consistently with staff.
  • Operate the Food & Beverage department within established expense budget.
  • Assist in preparation of the annual Food & Beverage budget per hotel General Manager guidelines.
  • Coordinate the preparation and participate in the creation and execution of the hotel Food & Beverage action plans.
  • Develop a full working knowledge of the operations of the hotel, including Sales, Guest Services, and Reservations, Housekeeping.
  • Perform other duties, attend all trainings and meetings as requested by management.
