About the role

Legends Global, the leader in privately managed public assembly facilities, has an immediate opening for a Director of Food and Beverage at INTRUST Bank Arena and Century II Performing Arts and Convention Center. The Director will direct and coordinate the entire food and beverage operations at Legends Global managed INTRUST Bank Arena and Century II Performing Arts and Convention Center. Daily management of the Food and Beverage Department to include Concessions and Bars, Warehouse, Kitchen, Suites and Catering, and completion of required reporting by Regional Managers and Legends Global Corporate. ESSENTIAL DUTIES AND RESPONSIBILITIES: Markets Food and Beverage Services to clients and establishes Food and Beverage controls. Creates Food and Beverage sales projections and budgets for facility events. Develops event work plans including scheduling and ordering and assigns appropriate duties to subordinates. Reviews food and beverage lists submitted by each department manager to determine that sufficient items are ordered weekly. Oversees Food and Beverage operations during events to ensure client satisfaction. Maintains cost and quality control standards. Inspects food service facilities to ensure that equipment and buildings meet requirements of state and local health laws as well as internal regulations. Analyzes information concerning facility operations such as daily food sales, patron attendance and labor costs to prepare budget and to maintain cost control of facility operations. Inspects and tastes prepared foods to maintain quality standards and sanitation regulations. Reconciles accounts and generates post event reports for finance. Supports other Legends Global accounts when appropriate. Manage Food and Beverage budget to maximize revenues and control costs. Attend weekly Director Meetings and Production meetings along with leading department staff meetings. Handle duties and problems associated with the assigned supervisory responsibilities such as evaluating employee's performance, recommending promotions, raises, terminations and disciplinary matters. Perform managerial functions: planning, organizing, communicating, supervising, scheduling, and other general functions as needed. Work with all departments to ensure quality experience. Serve on the security committee and assist Legends Global Security Team with planning and implementing table top exercises. Participate in the event MOD rotation along with all Senior Management. Ensure accurate employee timekeeping and approve hours which were completed for all employees for accurate payroll reporting. Work extended and/or irregular hours including nights, weekends and holidays. Serve as a resource for Legends Global management at the Orpheum Theatre and Capitol Federal Amphitheater. Must be able to pass a background/credit check. Position requires the ability to work at all Legends Global facilities in Wichita and Andover. Other duties and responsibilities as assigned. SUPERVISORY RESPONSIBILITIES : Manages subordinate Catering, Concessions, Bar's and Chef/Kitchen supervisors and is responsible for the overall direction, coordination, and evaluation of any of these units. The Director carries out supervisory responsibilities in accordance with Legends Global's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees as well as planning, assigning and directing work, appraising performance, rewarding, disciplining employees in conjunction with Human Resources.
