Act as the primary visual authority and leader in the dining room in the absence of the Restaurant Manager, ensuring the "Ramsay Standard" is executed without compromise. Direct the daily operations and allocate specific roles to the team, overseeing the seamless execution of opening, service, and closing procedures. Ensure all company documentation, shift reports, and financial logs are completed with 100% accuracy before the close of business. Act as the strategic voice for the restaurant in departmental meetings, ensuring clear communication between the restaurant and resort leadership. Remain relentlessly guest-focused, ensuring the team maintains precise order execution and the sophisticated pace expected of a Gordon Ramsay establishment. Lead guest recovery efforts by handling complaints with professional poise, providing immediate solutions, and briefing the Restaurant Manager on actions taken. Conduct high-energy pre-shift briefings to align the team on daily specials, guest preferences, and upcoming business volumes. Maintain an uncompromising standard of cleanliness and organization across all guest-facing and back-of-house service areas. Drive daily profitability by leading the team in up-selling initiatives and menu engineering strategies to maximize the average guest spend. Maintain absolute accountability for all guest payments, cash handling, and end-of-shift financial reconciliations. Monitor and maintain operational stock levels, initiating orders for equipment and consumables to ensure zero service interruptions. Maintain expert-level knowledge of all menus (breakfast, evening, and bar) to provide confident, detailed recommendations to guests. Foster a high-performance culture by communicating professionally with all colleagues and mentoring the team to meet evolving luxury hospitality benchmarks. Stay informed of resort-wide events and occupancy levels to proactively adjust staffing and service strategies. Please note that we believe in flexibility and multi-skilling, and you may be asked to do different tasks from time to time to enable us to meet the needs of our guests and colleagues. Proven experience in a Managerial role, ideally within a luxury or high‑volume environment. Qualification in Hospitality Management/Food & Beverage preferred Additional certification(s) in Food & Beverage will be an advantage Experienced in all aspects of restaurant and banquet service. Minimum 3 years of relevant experience in a similar capacity with proven records in delivering results Excellent reading, writing and oral proficiency in English language What is in it for you?
