YOU WILL BE: The Restaurant Dishwasher / Steward is the foundation of the kitchen's operational integrity and food safety. In this role, you are responsible for maintaining a pristine, organized, and sanitary environment across all dishwashing, trash, and floor areas. By ensuring that every plate, glass, utensil, and culinary tool is impeccably sanitized and ready for service, you directly enable the culinary and service teams to deliver the high-standard luxury experience expected by Saks Global guests.

Responsibilities

  • Stewarding & Dish Operations
  • Sanitization Pacing: Maintains a swift, steady pace for washing, sanitizing, and restocking all pots, pans, culinary dishes, flatware, and premium glassware to support active service lines.
  • Careful Handling: Exercises extreme caution and care when handling delicate breakables (such as fine china and crystal glassware) to minimize breakage and ensure safety.
  • Machine Maintenance: Systematically operates and maintains the commercial dish machine by checking chemical levels daily, ensuring optimal temperature standards, keeping testing strips on hand, and immediately reporting mechanical malfunctions to the Chef or Restaurant Manager.
  • Station Organization: Sets up and organizes the stewarding area with designated solutions, proper sanitation buckets, and separate soaking stations for pots, pans, sinks, and silver.
  • Kitchen Cleanliness & Environmental Safety
  • Floor Maintenance: Proactively monitors and cleans kitchen floors, keeping them completely free from spills, water, grease, and debris to ensure a slip-free work environment.
  • Waste Management: Periodically monitors all kitchen trash and recycling receptacles, removing and replacing liners promptly when full to maintain optimal hygiene.
  • Chemical Literacy: Possesses a thorough understanding of all sanitizing materials, safety data sheets (SDS), and chemical solutions used for deep cleaning.
  • Culinary Support: Assists the back-of-house culinary team with basic food preparation tasks and additional heavy-duty cleaning projects throughout the kitchen as requested.
  • Team Collaboration & Professional Conduct
  • Professional Rapport: Fosters and maintains respectful, collaborative, and professional working relationships with line cooks, stewarding teammates, chefs, and front-of-house staff.
  • Luxury Grooming Standards: Maintains the highest level of personal hygiene and luxury presentation, including a clean, pressed uniform and professionally groomed hair and nails to eliminate any risks of food contamination.
  • Schedule & Shift Integrity
  • Arrives at the workstation on time, fully dressed in proper uniform, and equipped with any necessary personal protective equipment (PPE).
  • Exercises absolute integrity with scheduling by punching in/out accurately for all shifts and coordinating timed meal breaks seamlessly with the culinary team.
  • Follows established corporate procedures for any schedule or shift modifications, and coordinates all time-off requests proactively with management.
  • Upholds all Health and Sanitation standards as directed by Saks Global, the local Health Department, and third-party sanitation auditor

Requirements

  • Previous stewarding, dishwashing, or utility experience in a high-volume restaurant or upscale hospitality environment is preferred but not required.
  • Drive: Proven ability to work autonomously and maintain high operational standards with minimal direct supervision.
  • Speed & Efficiency: Highly motivated, results-driven, and able to work quickly and safely under high-pressure, fast-paced kitchen conditions.
  • Team Mindset: Fosters a positive, collaborative spirit with a dedicated "win together" attitude.
  • Physical Demands: Role requires significant physical stamina for extended periods of standing, walking on wet surfaces, bending, climbing stairs, working in high-humidity/high-temperature environments, and the ability to lift and carry up to 35 pounds.
  • Flexibility: Must be willing to work a flexible schedule tailored to premium hospitality business needs, which will include evenings, weekends, and holidays.
