Position: Hygiene & Sustainability Manager Department: Food & Beverage/ Culinary Reports to : Resort Manager __________________________________________________________________________________ PURPOSE OF POSITION This position is structured with scope of responsibilities related to Sustainability and Hygiene. The component related to Hygiene functions is responsible for the development, implementation, and maintenance of the resort's Food Safety Management System (FSMS) and general sanitation protocols. This role ensures that Raffles Seychelles exceeds all local and international health and safety regulations (including HACCP and ISO 22000). You will act as the primary guardian of guest and Heartist health, ensuring that every culinary experience and facility interaction is safe, hygienic, and compliant with Raffles' luxury standards. The component related to Sustainability functions leads the deployment of Accor & Raffles sustainability objectives within the hotel, ensuring that environmental & social ambitions are met. To shape the future of sustainable luxury hospitality by acting as a forward-thinking stakeholder while integrating sustainability within the expectations of the refined Raffles experience. To act as an avant-gardist, key local stakeholder that will also contribute to preserving local, cultural, and natural heritage. KEY ROLES & RESPONSIBILITIES Hygiene Functions: Design and manage the resort's HACCP (Hazard Analysis and Critical Control Points) system, ensuring all documentation and monitoring procedures are strictly followed. Conduct regular inspections of local and international suppliers to ensure the quality and safety of raw materials arriving at the island. Oversee regular food, water, and surface sampling for microbiological testing, interpreting results and taking corrective actions when necessary. Perform daily walkthroughs of all kitchens, bars, receiving areas, and waste management facilities to ensure "like-new" cleanliness and hygiene. Act as the primary point of contact for the Seychelles Public Health Authority and external auditors (e.g., LQA, Cristal, or SGS). Monitor the resort's water treatment and distribution systems, including Legionella prevention protocols and swimming pool chemistry. Develop and deliver comprehensive Food Safety and Personal Hygiene training programs for all F&B, Housekeeping, and Heart-of-House colleagues. Ensure all food handlers maintain valid health certificates and receive up-to-date training on chemical handling and cross-contamination prevention. Oversee the selection and safe use of cleaning chemicals across the resort, ensuring compliance with environmental regulations in the Seychelles. Manage the resort's Integrated Pest Management (IPM) program, coordinating with external contractors to maintain a pest-free environment. Lead the hygiene response team during any outbreaks or health-related emergencies, implementing immediate containment protocols. A "zero-tolerance" approach to health and safety violations An eagle-eye for detail, spotting potential risks that others might overlook. The ability to influence and lead diverse teams often requires the authority to stop operations if standards are not met. Comfortable working with data, lab reports, and complex regulatory documentation. Sustainability Function - Develop and implement environmental strategies and action plans to ensure the hotel's sustainability ambition: Energy efficiency improvements, green energy sourcing Sustainable F&B (food waste management, food sourcing, food trends) Plastic pollution reduction Diversity & Inclusion Support to local communities & charities Biodiversity protection - Coordinate all operational aspects to optimize sustainability performance: pollution control, waste management, energy consumption, water consumption... - Train staff at all levels in environmental issues and good practices. - Liaise for the hotel's sustainable development with relevant bodies such as local authorities, public bodies and NGOs. - Report on environmental performance to internal and external auditors and regulatory bodies to meet regulations and secure sustainability certifications. - Develop and implement environmental management systems to continuously improve the hotel's impacts on the environment. - Raising awareness of sustainable practices among guests. - Promote the hotel's sustainable performance locally and within the Accor group. - Oversee sustainable best practices in the surrounding community and within the group - Steer a support strategy to maximize the hotel's contribution to protecting nature and developing local communities - Synchronize sustainability objectives with those of the General Manager and Accor group associates. - Synchronize with Raffles Chief Sustainability Officer.
