Responsibilities
- Create, prepare, produce and bake pastries, breads, rolls and desserts for the club
- Prepare pastry food items according to designated recipes and quality standards
- Create pastry menu pairings with dinner menus/themes with Executive or Sous Chef
- Maintain cleanliness and comply with food sanitation standards
- Able to work all stations both AM and PM shifts. Assist in all areas of kitchen when needed.
- Maintain 100% quality food production at all times.
- Meet timing of food items as required.
- Ensure food is properly and safely stored. Responsible to ensure that food items are properly rotated, labeled and dated.
- Make sound decisions base on the needs of the club.
- Responsible for timely and complete set up of culinary station equipment, breaking down and putting away all items on workstation.
- Report necessary equipment repair and maintenance.
- Anticipate problems and notify chef on duty.
- Be flexible and willing to work schedules and shifts that accommodate business needs. Must be willing and able to work at special events on and off site, and or, at comfort stations.
- In the absence of a steward, must be able to wash dishes, pots, and pans as needed.
- Be able and willing to talk to guests about menus, special requests, etc.
- Maintain logs and documentation as required.
- Train and ensure safe work practices are followed, including the correct lifting techniques and use of equipment.
- Report to work on time and as scheduled.
- Comply with all Company policy and procedures.
- Complete other duties and tasks as assigned by Sous Chefs and Executive Chef.
Requirements
- At least one year of line cook or prep cook experience in large world class resort, hotels and clubs required.
- Culinary degree and pedigree preferred.
- Food Safety Certification
- At least one year of pastry cook experience in large world class resort, hotels and clubs required.
- Knowledge of culinary and baking techniques.

- Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
- Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
- Ability to work in a team environment.
- Ability to stay calm and focused during the busiest of times.
- Ability to read, write, speak, and understand English; additional languages preferred.
- Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.

This role will be located at one of Discovery Land Company's locations: Makena Golf & Beach Club , set on Maui, HI. Makena is seeking a Pastry Cook 1 to join the Food and Beverage Department. The Pastry Cook 1 will be responsible to take direction towards innovative technique in pastry, bakery, and presentation of the baking program and all desserts. The Pastry Cook will be responsible for items including casual dining to fine dining experiences within the club, producing the Club's Pastry standards in desserts. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.
