Also supervises the Diet clerk in the diet card functions. Knowledge Skills and Abilities/Management Preferences Recruitment Range: $ 39,244 to $ 68,679 Considerable knowledge of the methods, materials, and equipment used in large-scale cooking and food service activities. Considerable knowledge of management principles related to supervision of employees. General knowledge of the dietary requirements for a variety of special diets and allowable substitutions for various items found on diet menus. Ability to estimate raw food quantities needed to supply the number of persons to be served. Ability to evaluate levels of sanitation and food safety and implement corrections when warranted. Longleaf Neuro-Medical Treatment Center (LNMTC), located in Wilson, NC, is a state-operated certified Skilled Nursing Facility (SNF). With a staff of about 520, LNMTC provides support to approximately 200 residents with complex medical needs and/or co-existing neuro-cognitive disorders. THIS POSITION IS DESIGNATED MANDATORY AND MUST REPORT OR STAY OVER DURING ADVERSE WEATHEREVENTS OR OTHER EMERGENCIES. Basic knowledge of preparation, cooking and baking procedures. Basic knowledge of appropriate methods of cleaning and sanitizing equipment and small wares. Ability to perform moderately heavy physical labor for extended periods of time. Ability to maintain professional, cooperative working relationships with employees and/or patients. Ability to maintain high sanitation standards as outlined in the NC Food Code. Ability to follow oral and written instructions. Ability to complete department records as required.
