To receive production sheets from Production Supervisor with menu and quantities to be produced. To produce meals in the appropriate quantities and the required standards. Food items are prepared as directed by the recipe, dietary meal requirements with no deviations followed unless instructed by the Production Supervisor or the Nutritionist / Dietician. Cafeteria items are taste-tested, observed for color, texture and appearance to ensure the quality in accordance with the established quality standards. To ensure all HACCP / food safety procedures are followed. Internal cooking temperature of prepared foods are checked and logged on the appropriate HACCP record. All leftovers are covered and dated as per the Company's procedures. To ensure that workstations and all equipment used are properly cleaned, sanitized and maintained. To ensure knives are logged in and out and returned to the knife cabinet at the end of the shift. All kitchen equipment is monitored, and any malfunctioning is reported to the immediate supervisor.
