Prepare and service all food items for à la carte and buffet menus according to hotel recipes, presentation standards, and portion specifications.
Lead assigned stations during service while ensuring consistency, quality, and timely execution of all menu items.
Maintain strong knowledge of all menu items, daily features, allergens, and promotions.
Support elevated plating standards and culinary presentation in alignment with hotel and restaurant expectations.
Assist with daily mise en place preparation and ensure readiness for all service periods.
Kitchen Operations & Efficiency
Maintain clean, organized, and efficient workstations throughout all shifts.
Ensure proper storage, labeling, dating, and rotation of food products using FIFO practices to minimize waste and spoilage.
Monitor product quality and support food cost awareness through proper portioning and waste reduction.
Assist with ordering, inventory organization, and station setup as required.
Ensure all kitchen equipment is operated safely and maintained according to standards.
Team Leadership & Collaboration
Provide guidance and support to junior cooks and culinary team members during preparation and service.
Actively participate in daily shift briefings by sharing ideas, feedback, and operational updates.
Work collaboratively with culinary leadership and front-of-house teams to ensure smooth and efficient operations.
Foster a positive, professional, and inclusive kitchen culture built on teamwork and accountability.
Support training and onboarding of new culinary colleagues when required.
Safety & Compliance
Follow and enforce all food safety, sanitation, and hygiene standards in accordance with Alberta Health Services regulations and hotel policies.
Maintain compliance with WHMIS, Occupational Health & Safety standards, and safe food handling procedures.
Ensure cleanliness and sanitation of all kitchen areas, utensils, and equipment.
Maintain proper temperature logs, storage standards, and food handling practices.
Follow all kitchen policies, procedures, grooming, and service standards.
What will you bring to this role?
Minimum 3 years culinary experience in a hotel, restaurant, or similar fast-paced kitchen environment
Journeyperson/Red Seal certification or international equivalent required
Food Handler certification required
Culinary diploma or certification preferred
Strong culinary techniques with experience in station leadership, service coordination, and quality execution
Strong interpersonal, communication, and problem-solving abilities
Highly responsible, reliable, and organized with strong attention to detail
Ability to work efficiently under pressure while maintaining consistency and professionalism
Ability to work independently and cohesively within a team environment
Ability to remain calm, courteous, and guest-focused during high-volume service periods
