Description of Work The Longleaf Neuro Medical Treatment Center is currently recruiting a Food Service Supervisor. This position will oversee food preparation and cooking activities. Work involves evaluation of menus and directing the work of the cooks to provide food production sufficient for the needs of the people who live at the Center. Position inspects serving kitchen and dining areas to observe quality of food prepared, cleanliness, and sanitation of the kitchen or dining area and equipment used. Position may inventory groceries and requisition quantities needed, ensures food items are set up properly for tray line service, for cafeteria settings or table service is properly arranged. Assignments are received in the form of prescribed menus prepared by a dietitian, but employees are expected to utilize acquired skills in determining the quantities of food to be ordered and prepared. Knowledge Skills and Abilities/Management Preferences Recruitment Range: $35,596 to $62,294 Basic knowledge of methods of preparation and cooking food in a large-scale operation Basic knowledge of the use and adaptability of various pieces of kitchen equipment Basic knowledge of instructing cooks in proper cooking methods and to direct and supervise kitchen personnel in serving meals and cleaning activities Basic knowledge evaluating levels of sanitation and food safety and implement corrections when warranted Basic knowledge following prescribed menus and recipes as well as specific oral and written instructions Longleaf Neuro-Medical Treatment Center (LNMTC), located in Wilson, NC, is a state-operated certified Skilled Nursing Facility (SNF). With a staff of about 520, LNMTC provides support to approximately 200 residents with complex medical needs and/or co-existing neuro-cognitive disorders. THIS POSITION IS DESIGNATED MANDATORY AND MUST REPORT OR STAY OVER DURING ADVERSE WEATHEREVENTS OR OTHER EMERGENCIES. Basic knowledge of preparation, cooking and baking procedures. Basic knowledge of appropriate methods of cleaning and sanitizing equipment and small wares. Ability to perform moderately heavy physical labor for extended periods of time. Ability to maintain professional, cooperative working relationships with employees and/or patients. Ability to maintain high sanitation standards as outlined in the NC Food Code. Ability to follow oral and written instructions. Ability to complete department records as required.
